Easy Side Dish to Bring to a Potluck Dinner - Sweet Potato Salad

Potluck and parties seem to go together. People are more willing to throw a party when they know they don't have to do all the work. Guests expect to bring a dish. If you've been invited to a party, and you need to bring a salad, try something different from the common macaroni or potato salad. Bring a sweet potato salad. People seldom think of sweet potatoes other than as a casserole at Thanksgiving, so bringing a cold sweet potato salad will be a delicious surprise. It's not common so the odds are no one else will bring the same thing.

Sweet potatoes are dark orange so they are full of nutrition and fiber. That makes this dish good for you as well as delicious. It also is very festive and looks beautiful in a glass serving dish. Sweet Potato Salad

Cook time: 40 minutes

Chill time: over night

Yield: 5 cups

Ingredients

2 pounds sweet potatoes

1/3 cup slivered almonds

1/4 cup mayonnaise

1/4 cup sour cream

2 tablespoons honey

Let's Cook

_____The day before (or in the morning) boil unpeeled potatoes until a fork inserted into the potatoes goes in easily.

_____Drain potatoes and place in the refrigerator until completely cold.

_____Heat a small pan on high.

_____Add almonds and heat until the almonds toast to a light brown. Shake the pan often to prevent burning.

_____Transfer to a dish to cool. (They will keep browning if you keep them in the hot pan.)

_____With a knife peel cold potatoes. Cut into large chunks and place in serving bowl.

_____Measure mayonnaise into a bowl.

_____Add sour cream and honey and mix until honey dissolves.

_____Gently mix dressing with cold potatoes.

_____Gently mix in nuts.

_____Keep cold until ready to serve.
