4 eggs
2 tbsp of oil
8 oz of boiled vegetables (spinach, chards, etc)
1.7 oz of cured ham
4 tbsp of fried tomato
2 onions
1 tbsp of flour

Start off by stir-frying some onion, then add some chopped ham and strained vegetables. Now, make the omelet by whisking the eggs, seasoning with chicken broth and salt and pepper, then pour into a frying pan hot with oil and cook up the eggs. After a minute or so spread the vegetables on top, then lower the heat. To make a sauce, take some of the onion, then add fried tomato and flour, stir well and let the flour fry, then add a glass of water. Mince the garlic and almonds, plus a dash of cognac. Add the sauce and let them simmer. Serve up the omelet and pour the sauce on to finish up. Delicious!
