Potluck dinners are as American as apple pie. But even when I tell a dinner guest not to bring anything because I have the meal all planned, they still bring something. The other day someone brought a store-bought cookie cake, which I did not want because I slaved over a apple pie. But sure enough, there were two competing desserts on the table.
So instead of telling people to bring nothing, I embraced the American potluck spirit rather than fight it.
Potluck Recipes
Assign everyone something to bring, even if it is small. No one wants to show up empty-handed to a dinner. Whether you ask one friend to bring wine and another to bring whipped cream or ice cream to top your warm apple pie, you will at least ensure you are getting what you asked for rather than a modge podge of stuff you do not want and that does not complement your meal.
I usually volunteer to bring a dessert when I go to a pot-luck. I have a favorite dessert that feeds a lot of people. I know it will be a hit, so I never spend time stressing out about it. You can find it at the bottom of this article.

Pig Lickin' Cake
1 box yellow cake mix
3/4 cup oil
1 (11-ounce) can mandarin oranges - with juice
4 eggs
1 teaspoon vanilla extract
***************************
1 20-ounce can crushed pineapple - with juice
1 5-ounce box instant vanilla pudding
1 9-ounce container cool whip topping
1) Preheat oven to 350 degrees.
2) With an electric mixer, beat cake mix, oil, eggs, mandarin oranges, juice from oranges, and vanilla extract.
3) Pour into a greased 9 x 13 inch pan and bake in preheated oven for 30 minutes.
4) Let cake cool completely.
5) Mix pineapple, juice from pineapple, vanilla pudding, and cool whip. Spread evenly over cake and return to refrigerator until ready to serve.
